Short Black
Served in: 90ml cup
Coffee Level: Half Full
Additions: Nothing
Comments: Heat cut before extracting coffee
Long Black
Served in: 180ml cup
Coffee Level: Half Full
Additions: Hot water
Comments: Pour hot water down side of cup
Ristretto
Served in: 90ml cup
Coffee Level: 1/3 full
Additions: Nothing
Comments: Heat up cup before extacting coffee
Doppio
Served in: 90ml cup
Coffee Level: Half Full
Additions: Second coffee shot
Comments: A doppio is two short black
 
Macchiato Traditional
Served in: 90ml cup
Coffee Level: Half Full
Additions: Two teaspoons of milk froth
Comments: Froth a small ammount of milk
Macchiato Glass
Served in: 90ml glass
Coffee Level: Half Full
Additions: Two teaspoons of milk froth
Comments: Froth a small ammount of milk
Latte
Served in: 200ml glass
Coffee Level: One third full
Additions: Partially frothed milk
Comments: Free pour partially frothed milk into centre of glass to obtain a 10mm "head". Serve on a saucer covered with a cocktail napkin
Mocha
Served in: 200ml glass
Coffee Level: One third full
Additions: Two teaspoons of chocolate powder (add before extracting coffee), partially frothed milk
Comments: As for latte, plus chocolate powder on top of drink
Flat White
Served in: 180ml cup
Coffee Level: One third full
Additions: Hot milk
Comments: Gently aerate milk so that milk texture is not too thick and leave a 3mm "head"
Cappuccino
Served in: 180ml cup
Coffee Level: One quarter full
Additions: Frothed milk
Comments: Extract coffee then froth milk. Immediately add frothed milk so level is just below rim of cup.
Sprinkle chocolate powder on top, then add more frothed milk until level is about 10mm above the rim
 
 
Hot Chocolate
Served in: 200ml glass
Coffee Level: Not used
Additions: Three teaspoons of choc powder added before pouring milk.
Comments: Froth milk as for latte, fill glass with frothed milk into three quaters full, top with chocolate powder and top up with hot milk.

Server with marshmallow etc.
